Marrying into my husband's family meant learning to love homemade noodle soup as much as all of them do. What I associated with a meal for sick days, is a special occasion dinner for them.

It's no wonder really, because a whole lot of effort goes into Chicken Noodle Soup made completely from scratch.

A few years ago I learned from my mother-in-law how she makes her amazingly flavorful and aromatic chicken broth. Hint: a bunch of spices, a whole chicken (older ones are better for this) and time are key elements.

She also makes the egg noodles to go with the broth herself - most of the time at least. Until recently, I couldn't get myself to make noodles from scratch. I don't know why, but suddenly that changed and I actually felt like kneading and rolling some dough for a while.

  1. Mix the flour and salt and make a well. Pour the whisked egg and oil mix into the well.
  2. Slowly stir the flour into the center of the well, first with a fork then knead by hand. Add water as needed to incorporate all of the flour into a uniform smooth dough ball. Cover and let rest 30 minutes.
  3. Divide the rested dough into 4. Thinly roll each section with a pasta machine or on a floured surface. Cut with the machine, or roll up each dough sheet ans slice by hand.
  4. Dust the cut pasta strips with more flour to prevent sticking and let dry until ready to cook.
  5. Cook pasta in a large pot of salted boiling water for 1-2 minutes until done.
  6. Drain right away and serve with homemade pasta sauce or hot broth for soup.

What Flour should I use?

This whole wheat pasta recipe works best with white whole wheat flour or whole spelt flour. Using 100% regular whole wheat flour will results in too dense pasta dough and noodles. You can still use whole wheat flour but it should be mixed with an equal amount of white all purpose flour.

How to Cut Homemade Pasta?

If you have a pasta machine or pasta attachment for your stand mixer, definitely use that to help you roll out and then cut the noodles to desired width. Follow the instructions of your particular machine.

Otherwise, you can hand cut the homemade pasta dough. Roll out 1 dough section at a time. Then roll up the flattened dough sheet, making sure it is well floured to prevent sticking. Now slice the dough roll to your desired width:

  • 1-2 mm for spaghetti like noodles
  • 3-4 mm for Fettuccini
  • 5 mm for Tagliatelle (like I did in the pictures)

Then unroll the pasta strips, dust with more flour, and let them dry on the counter or a rack until ready to cook.

How to cook Whole Wheat Pasta

To cook fresh pasta, first bring a large pot of salted water to a boil. Add the pasta strips to the water and stir.

Fresh pasta needs very little cook time and may be ready in as little as 1 minute, depending on thickness. Try a noodle after a minute. If it still has too much bite, cook for another minute. Then drain the cooked pasta and drizzle with a little olive oil to prevent sticking.

Serve to taste with herbs like parsley, Parmesan cheese, garlic, and black pepper. Or add to your favorite soup broth or pasta sauce.

  • 1 pasta machine optional

Ingredients

  • 1 ¾ cups white whole wheat flour or spelt flour *
  • 1 pinch sea salt
  • 2 eggs
  • 2 teaspoons olive oil or other neutral oil
  • water as needed

Instructions

  • Combine the flour and salt. Make a well into the flour mix, either on your counter or in a large bowl.

  • Mix the eggs and oil together in a small bowl. Pour into the well and work everything together with a fork, starting from the center out.

  • Switch to using your hands (and a bench scraper) to continue making the dough and add water as needed to make everything come together. Knead into a firm dough ball, cover and rest for at least 30 minutes (up to a few hours).

  • Section the dough into quarters. If you have a pasta maker, you can use that to first roll out your dough sections and then cut into desired noodle shape.

  • But you can also make homemade egg noodles without a pasta machine. Dust the counter with flour. Roll out one dough section at a time with a rolling pin. Sprinkle more flour on top and roll up the pasta sheet from the short side.

  • With a sharp knife, slice the roll into desired thickness (about 5mm for tagliatelle). Unroll each slice and toss with flour. You can hang them on a rack to dry or spread the noodles out on the counter.

  • To cook the pasta, bring a large pot of water to a boil. Add salt and then immerse the pasta. Fresh noodles don't take long at all. Depending on thickness, cook them for only 1-2 minutes.

  • Drain right away and drizzle with a little oil to prevent the egg noodles from sticking together. Divide the cooked noodles into bowls and top with hot soup broth (I used a Thai coconut curry broth, but especially chicken soup is awesome with homemade egg noodles).

      Hi Ayesha, thanks for your questions! It is possible to store homemade pasta. If you would like to refrigerate it to store it, I don't recommend storing it for any longer than 1 day for food safety reasons. To do so, I recommend laying the pasta on a lined baking sheet and covering it with damp paper towels to prevent it from drying out before you are ready to use it. You could also store it in the freezer for longer storage. To do this, I recommend that you toss the noodles with a little flour to prevent them from sticking, allow them to sit on a flat surface or on a pasta drying rack to dry for an hour or so, and then divide them between freezer bags to store in the freezer. Then, you will be able to cook the noodles from frozen if you like. Hope this helps but don't hesitate to let us know if you have any other questions.

    Ive been making homade noodles all my adult life,I like to ad a small amount of baking powder (apx 1/2 teaspoon)to my flour mixture. I like the texture it gives the noodles. Then when I cut them, because I prefer them shorter, I cut the rolled dough into 2 to 3 in wide strips and then flour the tops of each strip stacking the strips together then slice them about a 1/4 to 1/2 inch wide put some more folur on top and toss the noodles until they are coatedevenly, even the cut sides, then spead them out, I let them rest for about 10 min at least before cooking. and cook them in boiling salted water 2 to 3 minutes
