Salads don’t have to be boring. With a little love and some 🥬 healthy ingredients, they can be delicious, nutritious and packed with interesting flavors and textures. This Kourtney Kardashian Salad is a prime example of that. You know I don’t know celeb news, but I do know a good salad when I see one. And this one is 🌟 A-LIST 🌟! It uses juicy pieces of chicken breast (leftovers are great for this!), as well as bright orange 🍊 juice and a colorful assortment of add-ins. It’s bright, it’s fresh and will take your lunch to the next level.

The Kourtney Kardashian Salad is a make-ahead dream! You can batch-cook the chicken and have the salad dressing made ahead and stored in a covered jar in the fridge for the week. Have a variety of 🥒 veggies ready to go so all you have to do is assemble and pack it up! The flavors and textures will take your lunch to the next level thanks to orange juice and a variety of toppings such as crunchy seeds and crisp veggies. This is not any old boring salad! 🥗

How to Prepare The Kourtney Kardashian Salad

🔪 First, use a sharp knife to cut one skinless, boneless chicken breast into small cubes.

🍊 Then in a large bowl, toss the chicken with the juice of 1 orange or tangerine, salt, pepper and avocado oil.

🔥 Next, heat your grill pan or skillet and then grill the chicken for 2-3 minutes on each side.

🥬 Meanwhile, in a large salad bowl, add the romaine, and any toppings you choose. Then add in the cooked chicken.

🥣 In a separate bowl or glass measuring cup, whisk together the ingredients for the dressing.

🥗 Finally, pour the dressing on top of the salad, toss and enjoy!

For a plant-based salad, top this with tofu or chickpeas and substitute the honey for agave or maple syrup.

Ingredients

The Chicken

  • 1 chicken breast, cubed
  • ¼ cup orange or tangerine juice
  • ¼ teaspoon salt , to taste
  • ¼ teaspoon pepper, to taste
  • 2 teaspoons avocado oil , or your favorite oil

The Salad

  • 2 cups romaine lettuce, cut into pieces
  • 1 carrot, finely sliced
  • ½ cup cucumber, finely sliced
  • 1 tablespoon pumpkin seeds , optional
  • ¼ avocado
  • ½ tablespoon hemp hearts , optional

The Dressing

  • 2 teaspoons olive oil
  • 1 teaspoon dijon mustard
  • fresh lemon juice to taste
  • salt and pepper to taste
  • 1 teaspoon white wine vinegar , or any vinegar you like
  • 1 teaspoon honey , or agave

Instructions

  • Cut one skinless-boneless chicken breast into small cubes.

  • Toss the cubes with the orange juice, salt, pepper and avocado oil. Grill it for 2-3 minutes on each side. Add it to your salad mix and any toppings of choice.

  • In a separate bowl or measuring glass whisk in the ingredients for the dressing, pour on top of the salad and enjoy.

  • If meal prepping, store your extra dressing in a Mason jar in the fridge so it's ready to go when you need it.
