It’s SUPERBOWL time! But that doesn’t mean you have to blow your new healthy lifestyle for the New Year (we won’t call it a diet… it’s a lifestyle ;)). There are SO many delicious options that are healthy too. I’ve gathered together my top 10 favorite healthy Super Bowl Snacks! Throw them into the mix with all your regulars and you’ll have some good (healthy) options to choose from!

Caprese Kabobs

What you’ll need:

  • Wooden Skewers
  • Cherry Tomatoes
  • Mini Mozzarella Balls (I like to get mine at Costco for parties)
  • Fresh Basil
  • Balsamic Vinegar

Instructions:

  • Assemble cherry tomatoes, mozzarella balls and fresh basil on skewers.
  • Drizzle with balsamic vinegar
  • Optional: You can make your balsamic vinegar thicker by bringing it to a boil in small skillet, then reduce the heat to medium and allow it to cook for 5-8 minutes. This is called a balsamic reduction.

Baked Chicken Nuggets

What you’ll need:

  • Boneless, Skinless Chicken Breasts (cut into the size you want your nuggets)
  • Flour
  • Panko Breadcrumbs
  • Parmesan Cheese
  • Milk
  • Kosher Salt
  • Butter

Instructions:

  • Heat oven to 400 degrees. Line a cookie sheet with tin foil and spray with cooking spray.
  • Get three containers for dipping (I use loaf pans). Fill one 1/3 of the way with milk, one with (flour and teaspoon of salt mixed) and one with (panko breadcrumbs and parmesan mixed).
  • Dip your nuggets in milk, then flour mixture, back into the milk, then into the breadcrumb parmesan mixture.
  • Place on cookie sheet and drizzle with butter.
  • Bake for 20-30 minutes, turning after 10-15 minutes.

Extra Crispy Herbed French Fries

What you’ll need:

  • 4 Large Russet Potatoes cut into 1/4 inch sticks
  • Herbs of choice freshly chopped (I like rosemary, but basil is delicious too)
  • Seasoned Salt
  • Parmesan cheese
  • 1-2 TBSP Oil

Instructions:

  • Add the sliced fries to a large bowl and cover with cold water to soak in the fridge. I soak mine for at least 30 minutes but they can soak overnight.
  • Place paper towels on cooling rack. Drain, rinse and lay fries on cooling rack while the oven heats to 400.
  • Line a cookie sheet with foil or parchment paper and spray with cooking spray.
  • Toss fries with oil and lay them out on cookie sheet. Sprinkle with seasoned salt and herbs. Bakes for 30 minutes, flipping with spatula halfway through . Bake until they look crispy on the edges.
  • Pull them out and sprinkle with parmesan cheese.

Baked Sweet Potato Fries

What you’ll need:

  • 4 Large Sweet Potatoes
  • 2 TBSP Olive Oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions:

  • Heat oven to 400
  • Cut potatoes into 1/4 inch thick sticks and toss with oil and lay them on a cookie sheet lined with parchment paper
  • Mix seasonings together in a bowl
  • Bake for 30 minutes flipping with a spatula halfway through. Check them after 20 minutes to make sure they don’t burn.

Fruit Kabobs with Yogurt Dip

What you’ll need:

  • Greek Gods Honey Vanilla Yogurt

Instructions:

  • Assemble fruit on kabobs
  • Put yogurt in bowl and pretend you made it 😉

What You’ll Need:

  • 1 Cup Vanilla Greek yogurt
  • 1/3 Cup Creamy Peanut Butter
  • 1 TBSP Honey

Instructions:

  • Whisk all ingredients together
  • Serve with fruit (I like it with apples)

Street Tacos

What you’ll need:

  • Small Corn Tortillas
  • A Rotisserie Chicken
  • Cheese of choice (I like Mozzarella)
  • Taco Seasoning Packet
  • Toppings: Avocados (or Guacamole recipe below), Red Onion, Tomatoes, Salsa, lettuce (I like the bagged asian slaw without the dressing), plain greek yogurt (acting as sour cream)

Instructions:

  • Turn oven onto broil
  • Pull meat off of the chicken and put in a bowl
  • Top with taco seasoning and beat with hand beaters until shredded
  • Place tortillas on cookie sheet, top each tortilla with shredded chicken and cheese
  • Broil until cheese is melted
  • Top with toppings of choice

Grilled Veggie Tray

What you’ll need:

  • Veggies of choice (I like carrots, potatoes, zucchini, mushrooms, onions, green beans, red peppers, sweet potatoes)
  • 1-2 TBSP Olive Oil
  • Garlic Salt
  • Herbs of choice
  • Butter

Instructions:

  • Turn your smoker on high
  • Line a cookie sheet with foil
  • Toss veggies in oil and sprinkle with garlic salt
  • Roast veggies for 45 minutes
  • When they are tender, transfer to a dish and sprinkle with herbs

Avocado Deviled Eggs

What you’ll need:

  • 6 Large Boiled Eggs
  • 2 Ripe Avocados
  • 1 TBSP Lime Juice
  • Salt
  • 1 TBSP Plain Greek Yogurt
  • 1 TBSP Chopped Fresh Cilantro
  • 1 Small Jalapeño diced and seeded
  • 1 Green Onion

Instructions:

  • Peel cooled boiled eggs and cut in half lengthwise, scooping out yolks.
  • Mash together avocado and 2 egg yolks with 1 teaspoon of salt. Stir in lime juice and sour cream.
  • Add cilantro, jalapeno and onions if desired. Any of these can be left out if you don’t like them.
  • Spoon mixture into a gallon sized ziplock bag with the corner cut.
  • Like frosting, squeeze mixture out of the corner of the bag into egg halves, swirling in a circle.
  • Top with cilantro leaf.
